65 head of cattle is not self-sufficiency . . . it's a business. Or else you had a REALLY big family.
I'm experimenting with self-sufficiency, and it doesn't seem so onerous. However, if you're talking total self-sufficiency -- no fuel or other outside input -- then that would up the work level. That being said, my Mennonite neighbors use horses instead of fossil fuel, and they don't seem to spend an inordinate amount of time working. One thing is that they don't make their own clothes, so they are not totally self sufficient.
