The mathmaticians do their work based on scientific principles, that is, their work gets peer reviewed.
If you are a mathmatician with some coding skills you can inspect the entire open source bitcoin code yourself right here.

In the case of bitcoin, the math used has had over 5 years worth of review and they haven't found a flaw yet... and believe me, there's plenty of incentive to "crack" the bitcoin code... it's worth $6 billion right about now.
